Chef Graham has created a class that is all about creating a jaw dropping dessert – the kind that will make your friends and loved ones marvel at your new found patisserie skill. Chef will guide you through this introduction to the beautiful world of plated desserts.
With Chef’s many years’ experience leading the Pastry section in Michelin starred restaurants, you’ll be making, finishing and garnishing a selection of warm, cold and seasonal desserts and will also show you how using the right plate can make the difference between ordinary, and extraordinary. An insight into Chef’s world of top pastry cuisine will bear witness to the fact that sometimes, less is definitely more.
Dessert 1 Chocolate Fondant: is a delicious chocolate dessert, baked to perfection with a liquid centre. When you put your spoon into it, the chocolate fondant will ooze out, onto your plate. Your dessert will be accompanied by a sublime Crème Anglaise. As this needs to be enjoyed, straight out of the oven. Everyone will be invited to immerse themselves in the purest indulgence of a perfectly created chocolate fondant.
Dessert 2 Chef will take everyone through the process of baking vanilla and white chocolate cookies, but then elevating this simple soft biscuit to another culinary level. Using a variety of different flavoured mousses and creams fillings, crumbs and other patisserie garnishes, your dessert will both look and taste out of this world.
Dessert 3 Using sable, a sweet pastry, chef will show you how to create a layered dessert using seasonal gels, creams and fruit compote. Your finished dessert will of course by dressed to Chef’s high creative standards.
Learning outcomes:
Everyone will learn how different textures can help bring the dessert to another level. You will learn the benefits and importance of using ingredients in season. Understand how different flavours can be brought together and how to balance them altogether. Learn the skilled art of how to plate and finish their desserts, using different plates and garnishes to elevate the final product. Understand how to design and create their own desserts with confidence.
